Ingredients (serves 4):
- 6 eggs
- jar Novella Retail Sundried Tomatoes
- butter
- Salt and pepper, to taste
- Thyme, to taste
- Aged pecorino cheese, to taste
Instructions
Start by soaking the Novella Retail Sundried Tomatoes in water to rehydrate them.
As they soak, prepare the mini muffin batter: in a bowl, mix the eggs, thyme, salt and pepper. Shave the pecorino cheese into flakes and add to the egg mixture. Blend vigorously with a fork.
Drain the sun-dried tomatoes, dry carefully and julienne (or cut into cubes, it’s up to you!).
Butter a muffin tray, helping yourself with a piece of parchment paper to avoid using too much. Fill the muffin tray with the batter and bake at 180 °C (355 °F) for about 20-30 minutes.
Mise en place
For a colorful touch, decorate the mini muffins with a few pieces of julienned Novella Retail Sundried Tomatoes and a few sprigs of thyme!
